The Fairmont San Jose uses the best possible sources for the food the comes into the hotel’s kitchens. I took a little trip with Executive Chef Daniel Maurice up to Daly City to visit their mushroom purveyor of choice, The King of Mushrooms (Todd Spanier). I’ve gone-a-mushroom-hunting with Todd before, but unfortunately he was away today. In his absence, Al graciously let us take a few photos of Chef Daniel in the warehouse.
